Kolhapuri cuisine is renowned for being spicy and intensely flavoursome. I’ve toned down the heat a little for this Dhaba-style Chicken Kolhapuri but have kept the masala ingredients the same. The keeps an authentic taste without being too hot.
The masala used in this dish is the star of the show. Dried coconut, black cardamom, mace, and star anise are roasted with cumin and coriander seeds before being blended with cinnamon, roasted red chilli, and sesame seeds. The curry is then cooked down with fried onion, garlic, ginger, tomato, and a little lemon juice.
If you like your curries deeply flavourful I highly recommend this dish. Medium+ spice. Contains sesame seeds.
