This vegetarian tikka masala is a complex and time-consuming dish to prepare, but the result is fantastic, with layers of flavour and slight sourness from the addition of chaat masala. The roasted mushrooms are first marinated in yoghurt and spices and then finished with cream and methi. This our most indulgent veggie curry, and certainly not one to be missed!
